At Palenque we stand behind a long-established approach to Mexican cuisine with an array of dishes motivated by our deep roots of true Latin flavours.
Chef/Owner Francois Ivan Dominguez was born and raised in Mexico, specifically in the state of Chiapas, where at an early age his grandmother taught him her love of cooking along with the importance of eating healthy by choosing the freshest ingredients and not using cans or preservatives.
Francois moved to Los Angeles, California U.S. when he was eighteen years old. It is here where he worked for two prominent employers, Hillcrest Country Club and Sinai Medical Center, that allowed him to continue the fire ignited by his grandmother, his passion for cooking. These top notch facilities gave Francois the experience and time he needed to dedicate and improve his skills. Francois worked at Hillcrest Country Club, a private establishment, and served many elite clients such as Michael Douglas and Bill Clinton. Francois also worked at Sinai Medical Center where his job involved many hours of catering prestige events held at the medical center and around Los Angeles.
In 1998 Francois went on to work at Maggiano’s Little Italy in Denver Colorado, U.S. It is here that Francois worked as a supervisor and coordinator associate for the fine dining establishment. Following his leave from Maggiano’s Francois eventually made his way to Windsor in 2001 and found himself working at Caesars Windsor, specifically Neros Steakhouse. This was a busy time for Francois because by now he had a growing family and ever growing commitments. He loved the challenge and demand brought on at Nero’s and stepped up to the occasions with confidence and success. During his work at Nero’s he also took part in teams that entered cooking competitions for Caesars Windsor. These teams had major success and have given Francois great accomplishments. In his final years at Caesars Windsor Neros Steakhouse Francois developed and strived for more. This is where his dreams of Palenque ignited.
Francois’ dream of bringing authentic Mexican cuisine to a community that demanded and deserved it had arrived. With his grandmothers love of cooking and Francois’ hard work, dedication and creativity Palenque Fresh Mexican Cuisine opened its doors on December 10th 2011. Francois, along with his Palenque friends and family, have brought to life a traditional Mexican menu by sticking to the foundation of his grandmothers Latin teachings. Accentuating many of Mexico’s famous recipes, such as Chiles Rellenos and Chiles en Nogada, has been important for Francois in honour of his grandmother. The love and dedication that he has learned from her has been put into every dish he creates.
